We adapted this recipe from one we spotted in a Bonappetit Magazine!
Cantaloupe Gazpacho – #glutenfree #vegan #raw
Be sure to season with salt and pepper!
- 1 cantaloupe (peeled and seeded)
- 1 small cucumber
- 1 small zucchini
- 2 T chopped red onion
- 1/3 cup water
- 1/2 olive oil
- 2 T sliced fresh mint
- Combine all ingredients in a blender or food processor (except the mint). Blend until smooth.
- When smooth, place in bowls and top with sliced mint.
