This Chipotle Macaroni Salad packs a bit of a kick, which will bring a squeal of delight to all the guests at your backyard BBQ. This salad is not only gluten-free but vegan.
It is that time of year again when we start to mosey outside.
Friends start to gather in the backyard and before you know it, you have a full blown BBQ happening! That is how it happens for us. In our neighborhood our backyards all connect.
When one set of kids goes outside, all the rest follow. Then of course the parents follow!
So whether you are having a delicious meal with your family, an impromptu backyard cookout or a planned BBQ….THIS chipotle macaroni salad will take center stage at your get together!
This salad is simple and easy to make! First, start with some delicious and colorful ingredients.
Beautiful green celery, delightful red bell pepper, tangy red onion and some gluten-free elbow noodles!
You might remember me telling you the story of how I actually introduced it to my Whole Foods before it was even on the shelves there. Once the chefs got it in stock they began to use it to make the plant-based items in the prepared foods section.

- 8 oz of cooked gluten-free elbow noodles
- ½ red bell pepper, diced
- 3 ribs of celery, diced
- ¼ c of red onion, diced
- 1 c of Chipotle Mayo (Just Mayo)
- 1 T mustard
- 1 T Apple Cider Vinegar
- Put all dry ingredients into a bowl and set aside.
- In a smaller bowl, whisk the Just Mayo, mustard and Apple Cider Vinegar. When mixture is smooth, add to the dry ingredients.
- Stir to combine, chill for at least 30 minutes. Garnish with some chopped parsley (optional) before serving.
