I am a sucker for creamy salads at all times of the year! I love a good potato salad and macaroni salad. What I like best is the creaminess that comes from dairy free mayo! Though I am able to eat dairy mayo, I much prefer the DF version! Also, the entire family can eat it that way! (dairy allergy!) We adapted the recipe from here.
- 8 oz gluten free pasta
- 1 cup vegan mayo
- 2 T vinegar
- 1 T mustard
- 1 t sugar
- 1 cup celery
- 1 bell pepper, seeded and diced
- 1 roma tomato, diced
- 1/4 cup onion diced
- Boil pasta, drain, rinse, set aside.
- Mix may, vinegar, mustard, sugar until blended well.
- combine with cooled pasta, celery, bell pepper, roma and onion.
- Chill for 1 hour.
