The vegan dark chocolate muffins look good! Lots of ingredients I’ve never used before though. I’ve never even heard of millet flour or sorghum flour! I guess if you don’t have a problem with gluten you can just use wheat flour?
You should be able to sub the flours, but you might have to play with the exact measurements a bit. I’d start with a bit less then as you are mixing it add more if it looks too runny
