Homemade Baked Doughnut Holes – #glutenfree #vegan

I have been searching for an easy no-fry recipe for doughnut holes! I found everything I wanted in this recipe! These doughnut holes are light and full of crunchy flavor!  I would suggest tripling  the batch!  We ate these up so quick and needed more!  I adapted the recipe from here.

Homemade Baked Doughnut Holes – #glutenfree #vegan

Ingredients

  • Coating for doughnut holes:
  • 1/2 cup melted vegan butter
  • 1 cup sugar
  • 2 T cinnamon
  • Doughnut Ingredients:
  • 1 1/3 cup gluten free flour (I use Better Batter)
  • 1 cup crispy gluten free cereal
  • 2 T sugar
  • 1 T baking powder
  • 1/2 t salt
  • 1/4 cup vegetable shortening
  • 1/2 cup non dairy milk

Instructions

  1. Preheat oven to 425.
  2. In a small pan, melt butter. Then combine with sugar and cinnamon. Set aside.
  3. In a bowl mix flour, cereal, sugar, baking powder and salt. Fold in shortening.
  4. Stir until crumbly.
  5. Stir in milk.
  6. Roll mixture into 1 inch balls with your hands.
  7. Dip each ball into "coating mixture".
  8. Place in oiled 8X8 pan. Place balls together so they are touching.
  9. Bake 16 minutes.
  10. Remove from oven and let cool.
  11. ENJOY!

  7. Made these today for a special event at my three year old son’s school. They were a hit! When I picked him up this afternoon, he said “Momma, I want those donuts every day!” A few things that I will modify for future: make only 1/2 the coating (I threw out at least half and they were adequately covered), not have them touch (side-by-side) in the pan (the coating can come off when pulled apart), and take them out about minute 10 and roll them a bit (so the coating is cooked/crispy on all sides. These were just for my taste, however–others may not even care given how tasty they come out! Oh, and I had some stale GF Rice Krispies and they worked well. Thank you for this recipe!

      • I’ve gotten a lot of milage out of your recipe! Just now used my new Wilton donut pan–six donut forms so you can bake your own. Rolled the dough into a snake and then pressed into a sprayed donut form. Spooned on some of the butter coating and baked for 8 mins at 400 degrees in my convection oven. Holy frijoles! Like cake donuts, but GF and vegan!!! Thanks again for posting!!!!
