I am always looking to see what I can throw together for a week’s worth of lunches or dinners. You see, with my busy family schedule we don’t always get a meal at home together.
We actually spend much of the week at the soccer fields. Yep, I am a soccer mom!
So if I can prep some food and then throw the containers to take to the fields, that makes feeding my family a lot easier!

- 2 c chickpeas, cooked
- 1½ c quartered cherry tomatoes
- ½ c red onion, diced
- 1 c kalamata olives, halved
- 1 c diced cucumber
- ½ c feta cheese
- ½ c parsley
- capers (optional)
- 1 T balsamic vinegar
- ⅓ c olive oil
- Mix all ingredients together.
- Season with salt and pepper.
