This Roasted Cauliflower Alfredo Spaghetti provides a delicious dairy-free twist to traditional alfredo sauce. This recipe is also gluten-free.
You know I get excited about roasting my vegetables, right? This dish does just that! I am using roasted cauliflower to create some delicious dairy-free alfredo.
This is something you can get excited over! This delicious recipe is easy to make, but I bet you knew that was coming!
Starting off with a beautiful fresh cauliflower is key. Isn’t she pretty? Yep, I thought so too! I love cauliflower and feel it is an underused vegetable! We need to use it more when we are cooking? Deal?
Simply break apart the cauliflower into florets. The smaller pieces will be easier to roast!
The sauce uses one of my favorite spices! Any guesses? It is smoked paprika. It is used in the sauce and I put some top to season the dish even more!
Remember how I’ve talked about garlic and I rarely use anything more than garlic salt in my recipes? While I LOVE the taste of garlic, it doesn’t love me back. However, I have made this dish several times and shared it with some dairy-free, gluten-free friends. I was able to play around with garlic by using their tastebuds!
Garlic was a great addition to this recipe. Feel free to add 2 garlic cloves into the sauce mixture!
Get your blender or food processor out to help you make the sauce. It is pretty simple. Just dump and blend! See how simple this is?

Once your sauce is warm in your sauce pan, you can add it to the cooked noodles. The noodles have a beautiful green color. Gently toss to coat the noodles.
Once you have tossed the pasta and it is all coated with the delicious Roasted Cauliflower Alfredo, top with more smoked paprika and fresh parsley. Be sure to season with salt and pepper.

- 4 cups of cauliflower florets
- 2 T olive oil
- salt and pepper
- 8 oz vegan cream cheese
- 1 t smoked paprika
- garlic cloves (optional, see info in post)
- 2 c vegetable broth
- 1 box of Explore Cuisine Organic Edamame Spaghetti
- Fresh Parsley, for garnish
- Toss cauliflower with olive oil. Season with salt and pepper. Roast in oven at 375 degrees F for 25 minutes.
- In a blender combine roasted cauliflower, vegan cream cheese, smoked paprika, garlic (optional) and vegetable broth. Blend until smooth.
- Warm sauce in sauce pan on stove.
- Prepare spaghetti per directions on box.
- Combine sauce and spaghetti. Gently toss to coat.
- When ready to serve, place spaghetti onto plates, top with more smoked paprika and fresh parsley.
