This is a fun recipe for summer! I love garden fresh tomatoes! Tomatoes should be getting pretty good in our gardens this time of year, so I thought it would be a perfect time to share this tomato goodness! This recipe involves simple ingredients that come together for a flavorful summer pasta!

Ingredients
- 1 Batch of Homemade Gluten Free Pasta (I use a Better Better Recipe)
- OR 1 box of your favorite pasta
- 1 handful of diced fresh cilantro
- 4 diced scallion whites
- 3/4 c feta cheese
- 1/2 c black olives
- 4 roma tomatoes, diced
- salt and pepper to season
Instructions
- Make your pasta.
- Then add remaining ingredients, stir and serve!
Notes
Its that easy! If you are vegan you can simply leave off the feta or add a vegan mozz.

I love tomatoes but I have to be careful of the seeds.
Oh yes! If you use Romas you can gut them pretty easily

I think I eat some type of pasta dish with fresh tomatoes at least weekly all summer long. Will be using your ingredient combos next time (love black olives!)
