Hey there beautiful hummus! Yes, I am talking to you! We all know that I am a huge fan of colors, especially green! I am also a huge fan of dips! So this green hummus is a win win for me and I bet once you taste it, you will feel the same way!
With back-to-school among us, I am constantly reinventing what I put into my kid’s lunchboxes. My little guy loves to dunk and dip as well! He is a huge hummus fan and loves to dip his Plentils in everything!
I created this avocado hummus for his lunch box. I love hummus because it packs some protein since its made with chickpeas. It also has some sunflower seed spread in it for additional nutrients and protein. You add in that avocado and it provides a whole other level of nutrients!
It is super easy to make, you just toss everything into your food processor!
At our house we love using Plentils as a dipper for our hummus. Plentils are a unique snack that is made by Enjoy Life Foods. It is recipe time! Are you ready?
- Put all ingredients into a food processor. Blend for 1 minute.
- Remove lid and stir items.
- Blend again until completely mixed.
- Put hummus into a bowl. Garnish with a drizzle of olive oil and smoked paprika.

Since we are talking back-to-school lunches, I wanted to give one of my Food Allergy School Tips!
Birthdays happens, we can’t avoid them! Even though as I get older, I tend to subtract a year instead of adding a year! Ha! In school settings many parents send in cupcakes or cookies, etc. Insert a kiddo with food allergies…they often can’t eat those. So let’s be prepared! I get easy to pack items such as Enjoy Life Foods MINI COOKIES (love them!), individually wrapped cookies, seed mixes and chocolate bars.
I package them in a baggie labeled Allergy Friendly Treats. I also put my child’s name and teacher’s name on the front. I sent this bag into school. My kiddo keeps it in his locker. Then when a birthday celebration happens, my kiddo has a delicious safe snack! Easy peasy!
