How to Make Baked Bean Casserole
I love using beans as the bulk of my casseroles. There are so many fantastic ways you can prepare it. But this one is truly different. You’ll love how refreshing and comforting it is.
It has a combination of super sweet flavors mixed with an incredible smokiness. Oh it’s so good.
This casserole does have quite a few ingredients. But they are all important! You’ll taste and experience all of them.
- Baked beans
- white beans
- bell pepper
- sweet corn
- maple syrup
- apple cider vinegar
- canned pumpkin
- gluten-free flour
- baking powder

It might have quite a few ingredients, but the entire process is still pretty simple. It’s basically just measuring and stirring and then baking. Not difficult at all.
1. Saute the onion and bell pepper
The first step is to preheat the oven. After you did that, you must saute the onion and the bell pepper. This gets them all caramelized and cooked. They taste amazing if you do this.
2. Mix in baked bean ingredients.
Add the rest of the ingredients for the baked beans and simmer. This will let all the spices and flavors begin to meld together.
3. Mix cornbread ingredients.
While that is simmering, you can mix together the cornbread ingredients.
4. Pour into a casserole dish.
First, pour the baked beans into the dish. Top with the cornbread batter.
5. Bake for 35 minutes.
That’s it! Bake this for about 35 minutes. You’ll be able to smell it as it bakes. That is the most fun part.
Can you freeze baked bean casserole?
Honestly, because of how much sauce and bread there is, this is one recipe that tastes the best the day you make it. You can try to freeze it, but the texture will be slightly different when you bake it after you defrost it.
Is Baked Bean Casserole Keto-friendly?
No, this is not a keto-friendly recipe. There are sugar and maple syrup in it, plus the carbs from the corn and cornmeal.
Baked Bean Casserole – #glutenfree
- Preheat oven to 400.
- Saute the onion and bell pepper until soft.
- Mix in the rest of the 'baked beans' ingredients (through cinnamon) and simmer for 12 minutes.
- In a mixing bowl combine cornmeal, flour, baking powder and sugar. Next, add 'milk'.
- Grease a casserole dish, spread the baked beans mixture and top it with the cornbread mixture.
- Bake for about 30-35 minutes or until golden.
