Amazing Vegetarian Tacos
Taco Tuesday, Taco Thursday, whatever day you like to have Taco Night we are here to celebrate with a new recipe. Our family loves to eat tacos at least once a week. So I am constantly working to create new tacos.
Best Kind of Tortillas for Tacos
Sometimes just using a soft corn tortilla instead of a crunchy taco shell does the trick. Other times, we switch up all the ingredients and spices. For this special recipe, we are crisping corn tortillas to make them a touch crunchier. Though they aren’t shaped like a traditional taco, we are calling them tacos. Good? Okay, great! Thanks for working with me on that one!
You can probably use flour tortillas too. But I found that the corn tortillas actually crisp up a lot better than the flour. This crispiness adds a different texture and experience than traditional soft or crunchy tacos.
Also, corn tortillas are gluten-free. So there’s that added benefit too.
What to Put inside Vegetarian Tacos
This is the best thing about these tacos. They can be made however you want! I’m giving you my favorite combination. I just adore the combination. These taste like the best street tacos you have ever tried!
- black beans
- lime juice
- red onion
- red bell peppers
How to make black bean tacos
In a skillet over medium heat, warm the oil. When warm saute the onion and bell pepper until soft.
Next stir in the beans, corn and cumin. Heat mixture.
In a baking sheet, place corn tortillas side-by-side. Bake at 350 for 5 minutes. This will help to crisp up the tortillas.
Divide bean mixture among the tortillas, top with gauc. Garnish with lime slices and chopped cilantro.
Turn It Into A Chip Dip
Of course, if you don’t want to crisp up some corn tortillas, you can always serve these as two separate dips and have a snacky meal.
Put guacamole in one bowl, and the rest of the ingredients as salsa in another. You will love this!
Make it a Taco Salad
If you want, you can also make this a scrumptious salad. Here’s what to do if you want to cut back on the corn tortillas.
- Chop up your favorite lettuce.
- Layer with the beans, corn, red onion, red peppers, and spices.
- Top with guacamole.
Then, you can either top with some crunchy chips or leave them out.
