Whip up some unforgettable gluten-free and vegan chocolate chip cookies. They have a hint of peppermint, making them the perfect Christmas cookies.
Ah, it’s getting to be that time of year! The candy canes are taking over the endcaps in the grocery stores! We really love Spangler Candy Canes! They are allergy-friendly and are free of artificial dyes. My boys are cookie lovers so I thought I’d create a fun candy cane cookie recipe!
How to Make Vegan Chocolate Chip Cookies
These are some of my favorite cookies of all time. And the fact that they are both gluten-free and vegan is just amazing. I love that I can share these with anyone without being afraid of allergies or food choices.
I used these vegan ingredients in my cookies.
- Shortening (making sure it’s vegetable-based)
- Granulated sugar
- Maple Syrup
- Unsweetened applesauce
- Gluten-free flour
- Gluten-free baking soda
- Vegan chocolate chips
- Candy canes
Can you make the cookies without the candy canes?
If you can’t find candy canes in the store, you can use peppermint candies instead. These cookies taste just as scrumptious without peppermint too. You can leave them out.
How do you know when the cookies are done baking?
If you like softer cookies, they will be finished baking after about 11 minutes. Leave them in the oven for 15 minutes if you like your cookies crispier.
You can tell they are fully baked once you stick a toothpick in the middle of the cookies and it comes out clean.
How big do you make the cookies?
I always use a teaspoon so they are smaller. I like to get more cookies out of my dough that way. If you make larger cookies, you will need to adjust the baking time. Bigger cookies will take a little longer to bake.
Do you need an electric mixer?
No, you don’t need one to make these cookies. But let me tell you, it makes your job so much easier. Whipping the batter by hand is quite the workout! If you have a KitchenAid stand mixer, you’ll really have an easy time of it.
