Whether it is Taco Tuesday or just dinner time, these Chili Lime Tacos will be a hit with your family.
The taco base is a savory combination of spices and veggie burgers. It is packed with flavor!
These chili lime tacos with pineapple salsa are even perfect for Meatless Monday! Curious about the base of these tacos?
The veggie burgers happen to be my favorite! I’ve talked about The World’s Best Veggie Burger from Hilary’s Eat Well before! And that is the feature of our recipe today!
I love everything about these burgers! Not only are these burgers vegetarian but they are free from so many allergens. I love the clean label of these organic, NON GMO project verified.
Oh, and they taste amazing!
The trick is to start with defrosted veggie burgers because you are going to need to crumble them. You are going to saute up some onion and then crumble the veggie burgers into the skillet.
I also use fresh lime juice and lime zest in this chili lime taco recipe. The zest is really the mover and shaker in this recipe when it comes to flavor.
Zest provides amazing flavor to any recipe! Have you tried to zest a lemon or lime?
This recipe is so simple that it can feed a crowd. You can easily double or triple the recipe and turn these chili lime tacos into a tailgate party or a backyard fiesta!
Serve up with a side of fresh lime slices and you are good to go!
We eat a lot of tacos in this house. Whether simple or full of delicious veggies, we love tacos. I was curious about taco history.
Where did tacos originate from? When did a taco become a taco? All great questions.
Truth is, I scoured the interwebs to find some amazing taco facts for you and I came up short. There seems to not be a lot of history on our beloved taco.
So with that, we are going to leave it as is. We are just going to love the taco for the delicious taste it gives us and not question it’s history. 🙂
Getting hungry? I thought so!
- In skillet over medium heat, warm the oil. Saute the onions until soft.
- Crumble the veggie burgers into the onion mixture. Saute for 4-5 minutes until the veggie burger pieces are golden brown.
- Add in all the spices to the onion/veggie burger mixture. Saute for 1 minutes.
- In a bowl combine all ingredients of the salsa and set aside.
- Plate the soft corn tortillas and top with veggie burger mixture.
- Top with pineapple salsa and enjoy!
