I made it using Pancake Mix! Say, what? Yep, pancake mix coffee cake. This easy coffee cake recipe starts with a box of gluten free pancake mix from Enjoy Life Foods.

So what’s the deal with coffeecake? Why is it called coffee cake when it doesn’t have coffee in it?
Back in the 17th century in Europe, and then in America, it became customary to enjoy a sweet type of bread with our coffee. These early coffee cakes were more of a bread with yeast. Modern coffee cakes are typically leavened with baking powder and baking soda and much quicker to make because you don’t need to wait for dough to rise. Around 1880, the term “coffee cake” became common, and written recipes from that time did sometimes include coffee in them.
Since then the coffee cake has evolved into any type of breakfast cake, typically with a crumbly topping, and sometimes filled with fruit, nuts, and spices. Imagine what cooks of the 17th century would think of this coffee cake made with pancake mix!

Chocolate Chip Coffeecake - Made with Pancake Mix
- Preheat oven to 375 degrees F. Spray an 8x8 baking dish.
- In a large bowl, mix pancake mix, coconut sugar (1/3 c) and chocolate chips. Set aside.
- In a small bowl, whisk water, oil and dairy free sour cream.
- Combine the wet and dry mixes. Stir until well blended.
- Press mixture into greased baking dish.
- Mix remaining sugar and cinnamon together. Sprinkle on top of mixture in baking dish.
- Bake for 25-28 minutes.
- Let cool for 15 minutes before cutting.
