Coconut Mango Popsicles are the perfect vegan summer treat. Three simple ingredients create this delicious dairy-free popsicle!

Coconut Mango Popsicles
Confession time: My youngest son has a popsicle addiction! He just loves the sweet cold treat! So instead of trying to curb that craving, I have decided to create some delicious options for him.
Store bought popsicles can be pricey and full of ingredients that you might not want to eat and can’t even pronounce!
Kid Friendly Popsicles
These coconut mango popsicles are kid friendly. Your kids can even help you make them. They only have three ingredients. Frozen mango chunks, full fat coconut milk from a can and dairy free chocolate!

I told you that was easy. You can actually adapt this recipe to any type of fruit you love. You can also use fresh fruit if you like. For my busy day, it is easy to use frozen chunks instead of pealing and diced up fruits!
There are so many choices for popsicle molds. I got mine online. I got my set here (affiliate ad link).
Honestly, the chocolate drizzle might be my favorite part! You will notice in the pictures that some have “more” drizzle than the others. I prefer mine with smaller drizzle so I get some in each bite. The kids like a LOT of drizzle. They love biting into the popsicle and a huge chunk of chocolate comes off. You pick how you want it.
For the drizzle I used a dairy-free rice milk chocolate from Pascha. Pascha products are free from so many common allergens.
Don’t expect to find these ingredients on the label:
- tree nuts
- legumes (including peas)
How long do these mango popsicles last?
I like to remove the popsicles from the molds and place them into a freezer baggie. That way, the popsicles are easy to get out, when hungry hands are reaching for them!
These coconut mango popsicles are the perfect after school treat! My kids have requested these for their first day back to school!
Other Pascha chocolate recipes

coconut mango popsicles
- 3 cup frozen mango chunks
- 13 oz Full fat coconut milk from a can
- 1 cup Pascha Rice Milk Chips
- Toss the mango chunks and coconut milk into a blender. If you have a weaker blender, let the mango chunks thaw a bit. Blend until smooth.
- Pour mixture into popsicle molds and freeze for 2 hours.
- Over very low heat, melt the chocolate chips in a pot by continually stirring. Eventually the chocolate will become thin. Once thin, drizzle over frozen mango bars. Eat now or save for later (in the freezer!)
