Sometimes when I am working at home during the day, I love to make myself a fun dish to snack on. That is how this cucumber chickpea salad was created. It is great eaten as a side dish salad, served on crackers or bread. I love being able to take little nibbles as I am working. This cucumber chickpea salad is full of flavor with the use of fresh herbs and is very refreshing. The fresh dill elevates this salad. When using raw red onion in your dish, its good to soak the onion in water for a couple of minutes. This takes away the initial “bite” of the red onion and you can enjoy the flavors more comfortably.
- Mix all ingredients together.
- Let mixture chill for 30 minutes for flavors to marry.
- Serve and enjoy!
To make vegan, use a vegan mayo.
