Easy Bruschetta Toast
Summer time means there are lots of fresh vegetables and herbs in abundance in gardens and grocery stores all over. I love the availability of produce in the summer months. As a vegetarian, this is definitely my season! 😉
One of my favorite snacks or appetizers is bruschetta. There are so many ways you can make bruschetta. In keeping with our fresh simple recipes theme, our recipe uses easy to source ingredients like tomato and basil and of course some onion!
What is bruschetta?
Bruschetta is a starter dish that originated from Italy. The typical dish is grilled bread (of some sort) that is rubbed with garlic and topped with some olive oil and some salt.
Many bruschetta recipes (especially in the United States) include a variety of toppings such as tomato, vegetables, beans and cheese. The combination of tomato, basil and onion has become quite popular!
What bread do you use for bruschetta toast?
My bread of choice for this gluten-free easy bruschetta toast is the White Artisan Bread from Schar. This bread is gluten-free, dairy-free, non GMO, and preservative free! This bread is the perfect size to be toasted and then cut into triangles to serve.

How to make bruschetta

Put your bread slices into the toaster. **Tip: if you use a toaster that others toast gluten containing bread in, you are cross contaminating your gf bread! You are risking the chance of getting sick. You need to have a dedicated gf toaster!** Need a new dedicated gluten-free toaster? (affiliate ad link) You can generally pick up a new one for under $20!
Take that lightly toasted bread and cut into triangles. Place the triangles on a baking sheet. (affiliate ad link)
Next up is the fresh tomato mixture. Dice up the tomatoes. I used some rainbow cherry tomatoes for some extra color, but any type/color of tomato works.
Take your fresh basil, wash it and dice it. Mix your basil with the chopped tomato! Repeat with the red onion. Season with salt and pepper or garlic salt.
We avoided adding in lots of garlic to this recipe. Our family loves the taste of garlic but it does not love us back. If your body loves garlic, feel free to add some more in there!
You can certainly serve this dish at room temperature but we like to warm it up a bit. Gently spoon the tomato mixture onto the toast triangles.
Then pop into the oven for a few minutes to warm. Literally in less than 15 minutes, you will be enjoying some tasty toast! Serve and enjoy!

Easy Bruschetta Toast
- Toast all bread slices, then cut into triangles. Place triangles onto baking sheet.
- In a bowl toss in tomato, onion, basil and garlic salt. Mix together.
- Gently spoon tomato mixture onto triangles. Then warm for 5 minutes in a 350 degree F oven and ENJOY!
