I don’t know about you, but my mornings can get a little crazy. I have one child that heads off to middle school on the bus at 7am! Phew that is early! The second kiddo leaves for elementary school an hour later!
With that schedule seems to come shifts of breakfast! We have the early shift and the late shift when it comes to fueling our bodies for the day.
Before we had any food restrictions, I was in a cooking club. The ladies would come together and help each other batch cook.
One of my favorite recipes was a freezer burrito. Basically, you make all the stuffings of a burrito and let it completely cool.
Then you stuff the burrito and individually wrap it. Then freeze them. When it comes time to have breakfast you pop one out of the freezer, warm it up and enjoy!
That memory was my inspiration for this breakfast taco. Honestly, you could easily make this into a freezer meal by making burritos and using that method above!
Honestly, breakfast tacos are something that are easy to prepare and the entire family loves them. When you make them as a taco, each family member can add additional toppings to suit their taste buds!
We eat a lot of tacos in this house. Whether simple or full of delicious veggies, we love tacos. I was curious about taco history.
Where did tacos originate from? When did a taco become a taco? All great questions.
Truth is, I scoured the interwebs to find some amazing taco facts for you and I came up short. There seems to not be a lot of history on our beloved taco.
So with that, we are going to leave it as is. We are just going to love the taco for the delicious taste it gives us and not question it’s history.
Easy Breakfast Tacos
So we told you this recipe was easy and we were not kidding about that! We used a major helper product in this recipe!

Secret Sauce for Breakfast Tacos
We don’t share things with nuts in our blog posts, typically. My kiddos have had/outgrown some nut allergies over the years.
So far the only one we have left is an almond allergy. It actually went away (undetectable in the blood) and then came back a year later! Poor little guy!
So right now we are only avoiding almonds for him but we can enjoy other nuts. So today we are going to share a delicious cashew sauce!
This sauce is basically a delicious substitute for a dairy sour cream. You will need to soak one cup of cashews overnight.
In the morning, drain the water. Add 1 cup of fresh water to the cashews along with ½ cup of fresh cilantro.
Throw all those ingredients into a high powered blender. Blend until smooth. If you don’t like the thick consistency add in more water until you have reached your desired consistency!

Easy Egg and Quinoa Breakfast Tacos
- In a large bowl, whisk the eggs and milk. Set aside.
- In a small skillet warm the Southwest Quinoa until fully warmed.
- In a second skillet (larger one) warm the oil. When oil is hot cook the eggs. After 1 minute over low high begin to scramble the eggs. When about half the eggs are cooked stir in the warm Southwest Quinoa. Continue to cook until all eggs are gone.
- Scoop egg mixture equally onto tacos. Top with cashew sauce and cilantro. Enjoy!
