Traditionally burritos are made with flour tortillas, whereas enchiladas are made with corn tortillas.

Ingredients For Vegetarian Enchiladas
- olive oil
- small onion
- bell pepper
- black beans
- diced tomatoes
How To Make These Gluten Free Enchiladas
Saute veggies. In a skillet over medium heat, saute oil, onion, pepper and mushrooms until soft.
Add spices. Stir in oregano and cumin.
Add filling ingredients. Next add cooked rice and black beans. Stir until combined. Add 1/2 cup of cheese to this mixture. Stir.
Prepare enchiladas. Oil a 9X13 baking dish. Place half of the diced tomatoes in the baking dish. Warm tortillas so they are easier to roll. Divide the mixture up into the 8 tortillas. Roll tortillas and place seam down into the baking dish. Top rolled tortillas with remaining tomatoes, then bake for 15 minutes. Add remaining cheese and bake for another 3-5 minutes or until cheese is melted. Top with your favorite toppings and ENJOY!

Because I used diced tomatoes instead of enchilada sauce, I don’t have an issue with them getting soggy. But if you have had an issue in the past, it’s recommended to fry your tortillas slightly to crisp them before filling them.
Can you make these enchiladas with flour tortillas?
Yes you can. They wouldn’t be gluten free anymore, but you can if that’s what you have on hand.
Can I use something else besides black beans?
You could try using refried beans or tofu instead to keep it vegetarian. Or try adding shredded chicken or ground turkey for you meat eaters out there.
Can I make these enchiladas vegan?
Yup. Just simply swap out the cheese and use a non-dairy alternative instead.
Can I add more vegetables to this enchilada recipe?
Absolutely. Spinach would work wonderful in this dish. Or cooked, diced sweet potato would be a great alternative to the rice as well.
