Herbed Lemon Pasta is a delicious vegetarian meal that you can have on the table in 15 minutes or less. This lemon spaghetti recipe is light but packs a punch of protein with edamame pasta.

This is a pretty simple dish, which aligns with what we strive for here at VegtarianMamma. It uses fresh, easy to source ingredients and it is easy to make. When you can score a family friendly dinner in less than 15 minutes that is packed with plant based protein, that is a win!
Let me walk you through the steps of this dish! First you are going to boil your water. Oh, don’t forget to salt the water. Once you have the boiling salted water going you are going to work on some chopping, juicing and zesting!
There is no tomato sauce in this recipe, you are going to get your flavor from fresh herbs and lemons! Take two lemons and wash the outsides!
Using a zester, zest one of the lemons. Then cut the lemons in half and juice. You should get about ½ a cup of fresh lemon juice. Set the lemon juice aside and reserve 1 Tablespoon of that lemon zest.
Next up, you are going to work with the fresh herbs. We LOVE to include fresh herbs into our recipes. For this easy dinner recipe, we are using rosemary, oregano and basil.
The rosemary and oregano you are using only 1 teaspoon of each. Gently dice those herbs. You are going to use a whole cup of basil. Dice those basil leaves into a fine pieces. Remember to use fresh herbs. If you need to use dry herbs, you will need to decrease the measurements you use.
Gently combine the lemon juice, zest, herb and the parmesan cheese. Then add the spaghetti to the bowl. You are going to toss the pasta with those ingredients. If the pasta seems dry you can add 1 teaspoon of olive oil at a time until you reach the desired consistency. I love to season my pasta dishes with salt and pepper.
*I used a dairy-free parmesan but you are welcome to use a dairy cheese.

Herbed Lemon Pasta
- 8 oz Edamame Spaghetti from Explore Cuisine
- 1 t lemon zest
- 1/2 c lemon juice
- 1 c fresh basil diced
- 1 t rosemary diced
- 1 t oregano diced
- 1/2 c parmesan shreds dairy free or dairy
- Fill a large pot with larger to boil your 8 oz of edamame pasta. Be sure to salt the water. Boil the noodles for about 8 minutes or until the noodles are tender but still firm. When pasta is done, rinse under cool water.
- While your pasta is boiling, zest one lemon until you get 1 teaspoon of zest. Juice both lemons, which should yield about ½ cups of fresh lemon juice.
- In a large bowl, add the lemon zest, lemon juice, diced herbs and parmesan. Toss pasta with herbs, season with salt and pepper and ENJOY!
