Donuts are typically a sweet treat to be savored on special occasions. These lemon donuts are not only gluten-free but free of the TOP8 allergens. They are perfect for your special moment.

Lemon Donut Holes

These delicious lemon donuts are a twist on one of my classic childhood favorites!

Growing up my mom would make donuts on special occasions. It was not something that we did very often; because of this, it was a big treat for me.

She would make the donuts from biscuit dough then drop into hot oil for a few minutes. We would then toss then in bags of sugar, cinnamon, and sugar or powdered sugar combinations.

This was comfort food for me.

Insert needing to eat gluten-free, I no longer have that option anymore for that specific type of donut…until now.

I’ve been hard at work to recreate this comforting childhood memory and I am blown away with the results.

How to Make Gluten-Free Lemon Donuts

The secret to gluten-free donuts that taste like the ones my mom used to make is Enjoy Life Food products. 

I am beyond thankful for Enjoy Life Foods products. They have truly been a savior in our food allergy and gluten-free journey. Thanks to their products we have been able to safely enjoy many of the comfort foods we have missed.

I used the pizza crust mix to create our donuts. I love that all you need for this mix is a little oil and water. That’s it! The best part is the mix is free from these allergens: 

  • Wheat
  • Dairy
  • Peanuts
  • Tree nuts
  • Egg
  • Soy
  • Fish
  • Shellfish
  • Mustard

My youngest was so excited about these little gems. You see his brother can eat gluten and has enjoyed donut holes in the past. Now we can all enjoy the same donut at the same time!

Fresh Lemon Flavor

I chose lemon to flavor these donuts because of the beautiful freshness it brings to the donut. The lemon compliments the sweetness of the sugar. They come together to make the perfect pair!

Lemon Donuts

Author: Cindy Gordon (Vegetarian Mamma)

Ingredients

  • 1 Enjoy Life Foods Pizza Crust Mix
  • 1 T oil
  • 1 1/4 c water
  • 1 T lemon zest
  • 1/4 c fresh lemon juice
  • 1/2 c sugar
  • For topping - 3/4 c of additional sugar into a gallon size baggie

Instructions

  • Gently fold together the pizza crust mix, oil and water.
  • When that is mixed well, add in the lemon zest, lemon juice and sugar (1/2 c).
  • Mix well.
  • Let dough rest as you heat your oil.
  • When oil is hot, start to roll dough into 1 inch balls.
  • Place balls into hot oil about 5 at a time (depending on the size of your fryer or pot). Cook 2-3 minutes.
  • Remove remove from oil, place on paper towel for a few seconds. Then place into hot donut holes into sugar baggie and shake.
  • Remove from baggie and put on plate to serve.
  • ENJOY!

Notes

Donuts are best when hot. Donuts can be saved and reheated the next day. Feel free to adjust the sugar content, we just wanted sweet donuts 🙂

The Best Deep Fryer for Donuts

I did use a deep fryer for this recipe, however, you are welcome to fry your donut holes in a pot with oil on the stove. You can use whatever method you prefer. If you are looking for a fryer, I use a Fry Daddy. I do not fry items often, so I love the ease of this particular unit. It has a lid so you can easily store it in-between uses.

    I am not the world’s hugest doughnut lover which is a relief since I am gluten free and most doughnuts are not. I do however, enjoy a cinnamon twist doughnut occasionally. No icing.

    I wouldn’t have thought to use a pizza crust mix and make donuts! Awesome! Can I just hire you as my personal baker?? HA! I used to love all donuts prior to going gluten free. Since going gluten free I haven’t had that many good donuts and now that I am egg free, I just don’t bake many things like this. I’m not sure of the texture and if something has come out right.

      The deep fry is the trick with this one. Good texture. We don’t use the deep fry hardly at all but need to for this recipe. It was worth it 🙂
