I am a huge fan of roasting foods and I am a huge fan of these lemon roasted potatoes. Potatoes are probably one of my favorite foods to roast! I have been adding in lemons to the items I am roasting to lighten the flavors in dishes!
Whether you are gathering your friends around the table for a holiday dinner or a Sunday supper, this dish will delight all!
To get the perfect potatoes, you need the perfect pan! I have added a new pan to my collection!
Nordic Ware is a small, family owned and operated company that makes most of their products in Minneapolis, MN. They are the original creator of the Bundt Pan, and have been in business for 70 years. The folks at Nordic Ware were kind enough to send me one of their Natural Prism Bakeware Half Sheet Pans to try.
The textured bottom of this pan does some pretty cool things. It keeps food from sticking, and allows air to flow underneath food to make it extra crispy. It’s also made of natural aluminium without any chemical coatings! I really enjoy using this for my baking.

Ready for the recipe?
- Gently mix all ingredients together except parsley.
- Roast/bake in oven at 400 degrees F for 15 minutes or until potatoes are soft.
- Remove from oven, remove lemons.
- Put potatoes into a serving bowl, garnish with parsley.
