I am a huge fan of roasting foods and I am a huge fan of these lemon roasted potatoes. Potatoes are probably one of my favorite foods to roast! I have been adding in lemons to the items I am roasting to lighten the flavors in dishes!
Whether you are gathering your friends around the table for a holiday dinner or a Sunday supper, this dish will delight all!

Lemon Roasted Potatoes
- Gently mix all ingredients together except parsley.
- Roast/bake in oven at 400 degrees F for 15 minutes or until potatoes are soft.
- Remove from oven, remove lemons.
- Put potatoes into a serving bowl, garnish with parsley.
