Lemon Roasted Potatoes - Gluten Free Dairy Free

I am a huge fan of roasting foods. I loved my oven-roasted brussels and carrots! And I am a huge fan of these lemon roasted potatoes. Potatoes are probably one of my favorite foods to roast! I have been adding in lemons to the items I am roasting to lighten the flavors in dishes!

How to Make Lemon Roasted Potatoes

This is such a simple recipe. It’s perfect for days when it’s not too hot outside. You will be roasting them in the oven, which can heat up your house. 

Ingredients

There are only a few simple ingredients: 

  • Red potatoes
  • Lemon
  • Olive oil
  • Garlic salt
  • Fresh parsley

You can find the entire recipe in the printable recipe card at the bottom of this post. But here is a really quick overview of how you can make this recipe. It’s so easy! 

  1. Cut up the potatoes
  2. Mix everything together in a big bowl. 
  3. Roast the potatoes

That’s it!

How To Make Roasted Potatoes in the Air Fryer

These will turn out just as tasty in the air fryer. I have a recipe with all the details – check out my air fryer potatoes. 

What Type of Potatoes Are Best to Roast? 

I personally love red potatoes for roasting. I like how tender the potato skin is. I also think red potatoes have a richer flavor. 

For A Little Fun Add Some Cheese

If you want to mix things up and make something feel fresh and new, just sprinkle some freshly grated parmesan cheese on top during the last 5 minutes of baking. They will come out crispy and oh so decadent.

Lemon Roasted Potatoes

Ingredients

  • 8 med red potatoes quartered
  • 2 lemons quartered and deseeded
  • 1 T olive oil
  • 2 T garlic salt
  • 1/4 c fresh parsley

Instructions

  • Gently mix all ingredients together except parsley.
  • Roast/bake in oven at 400 degrees F for 15 minutes or until potatoes are soft.
  • Remove from oven, remove lemons.
  • Put potatoes into a serving bowl, garnish with parsley.
  • ENJOY!

    This sounds great! I love roasted vegetables. Probably, tomatoes, asparagus and cauliflower are my favorites—other than potatoes, of course! I have never used lemon before roasting. This, I will have to try.
