What is bruschetta?
I think that our culture has strayed a bit from the actual definition but in a tasty way!
So basically bruschetta is a starter type of dish that originates from Italy. It is generally a grilled bread that is rubbed with garlic, olive oil, and salt.
You often times will see olives, tomatoes, beans, and meat on bruschetta. I think the most common vision that comes to mind when saying the word bruschetta is the tomato version.
Our family loves to make recipes like this Mediterranean Bruschetta because they are so flexible. We can easily serve this as a starter if we have guests that come over.
Or perhaps we serve this with a glass of wine on our back porch and enjoy while the sunset. You get the idea, you can eat this flavorful recipe anytime and it will fill you up!
How to Make Mediterranean Bruschetta
This is such a simple appetizer to make, especially if you buy the frozen quinoa. I have the complete recipe at the bottom of this post. But before we get there, I’m going to explain a little bit more about the recipe for you.
Mediterranean Bruschetta Toppings
To make my favorite vegetarian appetizer one that tastes like it’s from Italy and Greece you have to use these toppings:
- Mediterranean Quina
- Kalamata olives
- Fresh basil
- Balsamic Vinegar
The Easiest Way to Make Quinoa
The secret weapon of this Mediterranean Bruschetta is the Mediterranean Quinoa base. We LOVE these frozen sides from Path of Life.

What are Mediterranean Flavors?
I used the Mediterranean quinoa from POL and so I really wanted to enhance these little baguettes with some of the same types of flavors. But what exactly are these flavors?
Any countries that border the Mediterranean Sea are included in this food genre. So you’ll think of Greek and Italian mostly. But it can also include north-African countries like Israel, Turkey, and Libya.
Some of the most-used flavors from that region are olives and artichokes, so I used those.
In addition to our quinoa mix, we are adding some artichoke, fresh basil, capers, and kalamata olives!
Combine Toppings In A Pan – Easy!
Add those flavorful ingredients into the pan and warm it all up! The smell of this Mediterranean Bruschetta is captivating!
You are going to want to sample this right out of the skillet! Plate up the warmed bread circles, then gently scoop the quinoa mixture on top of the bread.
Top the Bruschetta With Fresh Basil
Fresh basil is always a good thing. After you plate the bread with the mixture, I like to top them with a little extra basil.
A little extra basil never hurts! Did you know the name basil means royal or a kingly plant? Pretty neat!
Last Step – Add Balsamic Vinegar
These adorable and flavorful Mediterranean Bruschetta bites are almost ready. Honestly, you can eat them as is.
But, I want to go a step further. Get out your favorite balsamic vinegar and drizzle that goodness on top of the bites! You will thank me, I promise!
I think I’ve made you drool long enough! We don’t want your keyboard or phone to short out with drool! So let’s get on with this delicious recipe!
Are you ready?
- Cut your baguette into circles. Place onto cookie sheet and bake at 350 degrees for 10 minutes to warm. Set aside.
- In a skillet over medium heat, warm the Mediterranean quinoa until it is warm to your touch. Add in the artichoke, olives and capers. Stir and warm.
- Remove from heat and stir in the basil.
- Divide mixture onto each baguette slice, drizzle with balsamic vinegar and serve. ENJOY!
