And well, you need to make sure that you are eating well.
Insert this Mediterranean Pasta Casserole. It is perfect for those busy nights and makes delicious leftovers for tomorrow’s lunch!
The heart of this Mediterranean Pasta Casserole is the gluten-free pasta. I bet you might recognize this brand, as I use it a lot in my recipes. We LOVE Explore Cuisine.
This brand and THIS particular pasta, the Organic Chickpea Fusilli is my favorite! Why you ask?
This gluten-free pasta is made from chickpeas, so it is packed with protein. Honestly, I LOVE that aspect!
It is certified gluten-free and made in a dedicated gluten-free facility! It also carries the Vegan Society seal of approval.

The colors in this gluten-free casserole are amazing.
The fresh herbs in this gluten-free pasta dish, raise the bar when it comes to flavors!
We used fresh basil and flat leaf parsley!
The dish is basically cooked when you put it into the oven, you are just warming it. The gluten-free pasta is already cooked.
You are baking it or warming it to soften the other ingredients. The heat gives the red onions a chance to soften and mingle with the other ingredient flavors.
You can choose to halve the cherry tomatoes or leave them whole. A little secret from me, is I leave them whole.
As the temperature of the oven heats these little tomatoes it softens the skin and when you bite into them they explode with flavor in your mouth.

I am serious when I say that this Mediterranean Pasta Casserole is simply delicious. Several simple ingredients coming together for a powerful statement of flavor!

Are you ready for the details? Let’s do this!
- 8 oz box of Organic Chickpea Fusilli by Explore Cuisine
- ¼ c red onion, diced
- 1 pint grape tomatoes
- 15 oz of northern beans (drained and rinsed)
- ¾ c fresh flat leaf parsley
- ¾ c fresh basil
- ½ c artichoke hearts (from a jar, chopped)
- ½ c kalamata olives, halved
- 1 c mozzarella cheese, shredded
- Prepare the pasta, per the directions on the box.
- In a 9x13 oiled casserole dish add in cooked pasta and remaining ingredients.
- Bake at 350 degrees F for 20 minutes.
- Top with additional parsley for a pop of color and ENJOY!
