There is something about soup that just makes my heart flutter. Whether it is cold or hot, I do love a bowl of delicious soup.
Our temps have been dipping below zero here in Ohio and I have been busy whipping up batches of soup. This quinoa kale soup recipe is one that you’ll want to save!
This quinoa and kale soup recipe is a hearty one. It is full of good for you vegetables and stocked full of quinoa. I am a huge fan of quinoa!

Easy Quinoa Hack – Buy Frozen Quinoa
The quinoa and kale base in this recipe comes to us from Path of Life. This is a new (to us) brand that we are going to be working with this year.
I LOVE all the tasty products that Path of Life has to offer. Whether frozen side dishes, smoothies, frozen fruits and vegetables…they are all delicious.
The best part is that I can find some of their products in the freezer section of my Costco! I love that!
So for this recipe, we used the quinoa and kale side dish. This steamable bag is a combination of cooked quinoa (white and red), kale, garlic, olive oil, and some salt and pepper.
Simple, yet delicious ingredients when they all come together! My friend Margaret at MI Gluten Free Gal loves Path of Life too!
Quinoa Kale Soup - Comforting and Warm
- In a medium skillet, use 2-3 T of oil, saute mushrooms, leeks and asparagus.
- Once vegetables are soft add in tri-bean blend (can drained and rinsed) and diced tomatoes with chiles. Stir to mix.
- Add in vegetable broth and frozen organic quinoa and kale. Bring to a boil, simmer for 15 minutes.
- Garnish with fresh herbs. Enjoy!
