Red Pepper Mango Salsa is an easy snack to throw together in a pinch! It is raw and requires NO cooking! It uses fresh ingredients.
I originally created this easy raw salsa to go along with a rice and bean bowl way back when…but in the last year we have been enjoying this salsa as a stand alone.
The salsa is not your typical tomato salsa! It is full of flavor with the mango and full of crunch with the sweet bell pepper!

For this easy dip, I turned to my reliable chips from Beanfields Snacks. These crunchy chips are gluten-free and vegan!

- 3 roma tomatoes
- 1 red bell pepper, stem and seeds removed
- 1 mango, skin and seed removed
- zest and juice of one lime
- Place ingredients into a food processor and pulse until chopped to your desired consistency!
- Enjoy with chips, on a salsa or in a wrap!
