You can use fresh or frozen corn, it is your choice. I even put some extra jalapeno on top of a few of the muffins once they were in the muffin tins. Some of us in my family like a little more heat, so I added a touch more!

Mix all ingredients together in a medium sized bowl.
Gently spray a muffin tin with oil. Evenly pour the batter into the muffin tin.
Bake at 350 degrees F for 16-18 minutes.
Let muffins cool.
