First off, I LOVE SUNBUTTER. (affiliate ad link) I am so sorry to yell, but I wanted to be clear! I even visited the SunButter headquarters. You can see my amazing trip here and learn all about how SunButter is made!
We initially found SunButter because my youngest had a peanut allergy. Fast forward a few years and he has thankfully outgrown that allergy. He does have an allergy to almonds so we have to be careful of the spread we use. Thankfully, we can rely on SunButter.

The funny thing about these cookies, is they are magic. Not really, but they do kinda perform a magic trick!
After a few hours the inside of these cookies turn GREEN, if you are using SunButter. My kids LOVE this trick! Do not fear, it is NOT mold!
It is a chemical reaction! Over on the SunButter site you can find a full explanation in the FAQ’s. But the basic story is that the chlorophyll in the sunflower seeds reacts with the baking soda/powder in recipes when baked.

I prefer to gently push down the soft gluten free chocolate chip cookies when they come out of the oven! I like my cookies a little on the flat side, verses being too round.
These cookies are soft and delicious. They aren’t necessarily the dunking kind of cookie. These cookies can be stored on the counter in a sealed container for 1-2 days or in the fridge for about 2-3 days.

- Preheat oven to 375.
- Mix all ingredients together in mixer.
- Place flattened balls into greased cookie sheet.
- Bake for 8-10 minutes.
These cookies should be kept in the fridge and eaten within 1-2 days! Don't worry, you'll eat them up quick!
