Let’s get to this recipe!
- 1 T olive oil
- 1 c onion diced
- 2 c bell peppers diced
- 1 t chili powder
- 1 c salsa
- 4 c vegetable broth
- 1 can black beans rinsed and drained
- 2 c frozen corn
- 1/4 c Hatch Taco Sauce
- Optional Toppings: guac sour cream, cilantro
In a stock pot over medium heat, warm the olive oil. Add in the onions and bell peppers. Saute until soft.
Stir in chili powder, salsa, vegetable broth, beans, corn and taco sauce.
Bring to a boil and then simmer for 20 minutes.
Top with topping and ENJOY!
