It has simple ingredients but they pack a PUNCH of flavor! Never under estimate the common foods that you have in your pantry!

  • Onion 
  • Bell Peppers
  • Chili Powder
  • Salsa
  • Vegetable Broth
  • Black Beans

How To Make This Easy Southwest Black Bean And Corn Soup

  • In a stock pot over medium heat, warm the olive oil. Add in the onions and bell peppers. Saute until soft.
  • Stir in chili powder, salsa, vegetable broth, beans, corn and taco sauce.
  • Bring to a boil and then simmer for 20 minutes.

Simple and delicious ingredients, coming together to make your dinner extra special!

Can you freeze this black bean and corn soup? 

I’ve been asked if this soup can be used as a make-ahead meal and stored in the freezer. The answer is, yes, you can freeze this soup. 

Some people like to store their frozen soups in gallon-sized zippered bags and lay them flat in the freezer. Then, all you have to do is put them in the refrigerator overnight to thaw. 

When you are ready to cook the soup, put it in a large pot and heat it on the stove. 

So easy!

Southwest Corn and Black Bean Soup

Ingredients

  • 1 T olive oil
  • 1 c onion diced
  • 2 c bell peppers diced
  • 1 t chili powder
  • 1 c salsa
  • 4 c vegetable broth
  • 1 can black beans rinsed and drained
  • 2 c frozen corn
  • 1/4 c Hatch Taco Sauce
  • Optional Toppings: guac sour cream, cilantro

Instructions

  • In a stock pot over medium heat, warm the olive oil. Add in the onions and bell peppers. Saute until soft.
  • Stir in chili powder, salsa, vegetable broth, beans, corn and taco sauce.
  • Bring to a boil and then simmer for 20 minutes.
  • Top with topping and ENJOY!

    That’s right up my alley. I’m a huge fan of beans and southwest flavors, so I’m all over this. The only thing I would add is sour cream. I’m not vegan, so I can do that. 😉
