Pasta salad is something that we eat year round, but in the summertime, it seems that we enjoy it more often. There’s just something about the combination of the noodles and the fresh veggies that really take this pasta salad over the top. Not only is this summer pasta salad is family-friendly but It is perfect for lunch, dinner or a picnic.
I feel like so many people shy away from making this incredible and simple dish, but there’s really no reason to. The hardest part about making this dish? Cooking the noodles. Everything else is a breeze!
And one aspect that I really really love about this noodle salad? It’s taste so cool and refreshing on a hot summer day. Imagine a pile of this goodness on your plate next to some delicious salad and fresh fruit? Summer dinner perfection at its finest.

Summer Pasta Salad – Perfect to Share
During the summer and fall months, our family is on the go a lot. Between soccer games and school activities, I feel like we are constantly in “go” mode. Couple that with the potlucks and outdoor gatherings that we have with our friends, and I feel like by the time I set down to put my feet up for the summer, the school year has already started!
Before the first day of school, I like to have a get together with friends and family to share laughter, conversation, summer memories and delicious food. This pasta salad dish is perfect for those occasions.
I can’t truly describe how perfectly the flavors all mesh together, but trust…they do. Every forkful is jam-packed full of flavor bites that leave you wanting more. I’ve been known to make a double batch of this recipe and still have people scraping the sides of the bowl clean wanting more!
When I say that this easy pasta salad is simple and addictive, it truly is!
Ingredients For This Summer Pasta Salad
- Pasta Noodles – We used gluten free noodles, but any noodle works.
- Veggies – We like to use celery and carrot for color and crunch. But you can add other veggies like peppers or onions.
- Cheese – We love cubing up cheddar and using in this salad. But another type of cheese would also work like pepperjack, or feta. If making vegan, you can omit.
- Olives – Black olives are what we love and use. But green olives would also work.
- Chickpeas – This adds great fiber and a creamy element.
- Dressing – Use your favorite dressing for this pasta salad. We love using our favorite Italian dressing.
How To Make This Pasta Salad Recipe
Prepare your gluten free noodles. When completely cooked, rinse with cool water and set aside.
Once your noodles are completely cool, add in remaining ingredients.
Dress with your favorite dressing.
Simple Summer Pasta Salad – Let your family join in on the fun!
For me, there are a few requirements that I really love all my recipes to have. First and foremost, good taste and flavor. A dish has to taste good to make it worth eating, right?
Then, I like to check on the length of time and commitment that I’ll have to give to make it from beginning to end. If it’s too long, I’m usually out for the time being because our schedule doesn’t allow for it.
And last but not least, is this recipe something that my family and I can create together? More times than not, MOST recipes have all 3. And if they do, it’s bumped to the top of my meal-planning rotation!
I love, love, love family cooking time in the kitchen. Nothing makes my heart happier than watching my kids interact and learn the love of cooking that I have. Not only does it increase their knowledge and expand their pallets, but it also teaches them patience, direction following, and teamwork.

Another trick that I have for this pasta salad is that sometimes, I made it and leave it without any dressing added. It’s such an easy dish that I really like keeping it in our fridge for a quick snack for myself and the kids. Once it’s made, it keeps well for the week and the added chickpeas that we put in are a great added protein as well.
