If you are searching for vegan sweet potato recipes, this sweet potato tofu bowl will knock your socks off. It is a quick cooking air fryer recipe that you can customize with your favorite sauce.
I am a huge proponent of meal prep. With that said, could I be better about it in my personal life. Well….yes, yes I could. I know what to do but sometimes, it is that “doing it part” that seems to not happen.
We’ve shared some tofu bowls in the past, that you might want to check out. I simply adore this sweet and salty tofu bowl, of which you can use the sauce with this recipe! These Sweet Thai Chili Tofu Bowls are also a favorite of mine for lunch prep recipes!
My goal recently has been to prepare lunches so I can grab something easy for lunch that is not full of empty calories! This my friends is how our little sweet potato bowl was born!
Ingredients of the Sweet Potato Bowl:
- Cooked rice
- Sweet Potato Cubes
- Broccoli Florets
- Onion
- Tofu
- Cabbage (for garnish)

If there is one piece of advice that I can offer, when it comes to preparing tofu, is that you need to press your tofu. This is something that I learned along the way. When you press your tofu, it helps to remove extra liquid. By removing the extra liquid from your tofu, it will cook better and taste better!
Several years ago, I was introduces to the EZ Tofu Press. It wasn’t until I tried it, that I knew I had been missing out. This little gadget makes pressing tofu so easy. While, you might enjoy stacking heavy things on end just to press your tofu, I promise this way is much for effective and efficient!
The EZ Tofu Press can be used with most tofu brick sizes. Typically, you only see 1-2 different sizes at the store. A full size block and half blocks. The EZ Tofu Press is very easy to clean. It is top shelf dishwasher safe!

How to sauce your sweet potato tofu bowl:
I didn’t included a specific sauce recipe in this post because I want you to customize this sweet potato bowl and make it your own! I will however, make some suggestions for you!
- BBQ Sauce (store bought)– You have to admit that a bbq sweet potato bowl sounds delicious! BBQ sauce makes anything better, right? One of my new favorite store bought BBQ sauces is called G Hughes (and its sugar free).
- BBQ Sauce (homemade)– If you are looking to go the homemade BBQ sauce route, then I would love to share my Easy Homemade BBQ Sauce with you. It does contain sugar but you can adjust it to your needs.
- Coconut Aminos – I have fallen in love with coconut aminos in the past year. If you are wondering, just exactly what coconut aminos are, let me share. The taste is similar to soy sauce but the liquid is made from the sap of coconut blossoms. It is vegan, gluten free and low-glycemic.
- Buddha Bowl Dressing – I would also recommend this easy to make buddha bowl dressing.
How to make a sweet potato tofu bowl:
- To prep for your sweet potato bowl, you will press the tofu for 10-12 minutes, turning the knobs on your pressing every 3-4 minutes. While the tofu is pressing peel and cube sweet potatoes, trim broccoli florets and cut into into bite sized wedges.
- Once your tofu has been pressed, cube the tofu into small bite sized pieces.
- Place cubed tofu and sweet potatoes into their air fryer basket. Give the food pieces a spray of oil. Cook for 14 minutes at 380 degrees F.
- When your air fryer indicates that you have 7 minutes left, open the air fryer and gently shake the basket. Put the broccoli florets and onion pieces into the air fryer basket and give another spritz of oil. Cook for the remaining 7 minutes. (Note be sure to watch the ingredients in the last few minutes. Some air fryer models may not take a long to cook!)
- Remove ingredients from air fryer and divide equally onto 4 plates. Top with diced cabbage for garnish. Elevate the taste with your favorite sauce: Coconut aminos, Buddha Bowl Sauce or BBQ sauce. ENJOY the sweet potato bowl!
