I’m always on the hunt for decent comfort food. And not just any…a delicious pasta dinner recipe that makes me look like a cooking queen. (We all need a little credit, right?)
The good news? This cheesy taco pasta makes me look awesome and my kids love this recipe, too! Every bite the family loved and this taco meal is one that we actually make quite often.
The taco flavors are so delicious and this taco pasta recipe is just crazy simple. Even my kiddos like to join in on the fun of this pasta bake. Anytime I can get them helping out in the kitchen, it’s 100% awesome!

There’s just something delicious about the flavor. It’s like they’re eating tacos…but in pasta form. Plus, who doesn’t love noodles? I’ve made this for lunch, dinner and even sent some leftovers to school and it’s been a winning choice every single time.
My kids have gotten to where they even have started asking for it as well. My answer? I’ll be happy to make it as long as you help!

What kind of extras can you add to this taco pasta bake?
It’s up to you. I’ve seen people add in their own homemade taco seasoning, shredded cheese, sour cream and even more diced tomatoes.
Plus, if you don’t happen to be a vegetarian, you can add in some ground turkey and brown in a skillet over medium heat until it’s no longer pink.
I’m a firm believer that you control the recipe, so you can either print the recipe as is or add in some of your own favorite ingredients.
How do you store leftovers of this taco meal?
If there happen to be any leftover, I find that putting it into a baking dish with a lid and storing in the fridge for the next couple days works great. Cooking the pasta al dente gives it an awesome texture for leftovers!
Can you freeze this taco pasta bake?
I’ve honestly never frozen it, but I can’t say that I would recommend it. The freezing can change the texture of the pasta which could then alter the taste and flavor. I would say that eating this as fresh as possible is the best way to go.
Can you add in more black beans than the recipe calls for?
Sure! If you want to add in even more protein, add in another can or black beans! You can even add in kidney beans as well or other beans that your family enjoys to eat.
Many people tend to think of this dish as something that you make during the colder months of the year, but I couldn’t disagree more. I love this dish for the fact that it’s so versatile.

- Cook pasta per directions on box, drain and set aside.
- Heat 1 T of oil in pan, saute onion.
- When onion is soft, add salsa, corn, beans and spices. Stir and heat.
- Combine "sauce" with cooked pasta.
- Serve and ENJOY!
