When you think of a veggie burger, you might not think of a taco. The two actually pair nicely together to create a veggie burger taco! Take the delicious taste of your veggie burger crumbled to make the base of your taco.

My first task was to head to the farmers market! I just love getting all the fresh fruits and vegetables that are grown locally.
Once I gathered my vegetables, I set out to get my veggie burgers from Amy’s. I choose the Sonoma Burgers.
I knew that we already enjoyed the veggie burgers and wanted to take them up a notch by creating a taco dish! Game on! I knew this would be FUN and DELICIOUS!
While I realize that some will argue these are not tacos due to the soft shell, that is fine. I had a post a while back, where a reader complained on how I named the recipe. So let’s agree to disagree. It is okay if you want to call this recipe by another name! I am all for it! I respect that, but let’s agree that it is good!

For REAL, these veggie burger tacos are super yummy and you are going to scarf it down!
Hungry for the recipe? Let’s get to it…
- Bake veggie burgers per direction on the box.
- Chop of your red cabbage and set aside.
- Dice mango and set aside.
- Using a blender or food processor, blend BBQ sauce and avocado until creamy and smooth.
- Chop fresh cilantro and green onions, set aside for garnish.
- Once veggie burgers are baked, dice burgers into a crumbled type of consistency.
- Place veggie burgers onto corn tortillas, top with cabbage, mango and BBQ sauce! Don't forget the cilantro and green onions for garnish!
The corn tortillas work best if warmed before use. You can also grill them for a beautiful look. Please note that I did have a hard time (this time around) finding a certified gluten free corn tortilla. Many of the packages listed "may contain wheat." Just be cautious. Certified gf ones do exist! I found them after I went to a second store!
