Cheesy Roasted Red Pepper Alfredo (non traditional)

Cheesy Roasted Red Pepper Alfredo is not your mama's Alfredo. This roasted red pepper Alfredo sauce is kicked up a notch with savory cheese!

Ingredients

  • 1 box edamame pasta by Explore Cuisine
  • 1 tablespoon oil
  • 1 cup onion
  • 1 cup heavy cream
  • 6 oz queso blanco crumbled
  • 16 oz jar of roasted red pepper
  • 1 cup parmesan cheese shredded
  • 1 cup fresh basil cut into ribbons

Instructions

  • In a skillet over medium heat warm the oil and then saute the onions.
  • Once onions are soft, place onions, heavy cream and roasted red peppers into the blender. Blend until smooth.
  • Return mixture to skillet and slowly add in parmesan and queso blanco. Gently stir to combine.
  • In a pot, boil the edamame pasta per the directions on the box. Then drain and combine with the red pepper mixture in the skillet.
  • Gently toss the pasta to coat with sauce.
  • Plate sauced spaghetti, top with more crumbled queso blanco (if you wish) and with some fresh basil.
  • ENJOY!

This dish reheats well and is perfect for cheese lovers!
