Mashed Potato Casserole – #glutenfree

Ingredients

  • 4 potatoes any kind peeled and diced
  • 1 tablespoons Olive Oil
  • 1 small onion diced
  • 1 large stalk celery diced
  • 1 red pepper diced
  • 2 tablespoons butter I used non dairy soy free Earth Balance
  • 2 tablespoons milk I used non dairy hemp milk
  • 1 t smoked paprika

Instructions

  • Cook potatoes in boiling water until tender. Drain potatoes; add in milk,butter and smoked paprika and mash.
  • Heat oil in skillet and saute onion, red pepper and celery.
  • Poor into lightly oiled baking dish.
  • Bake at 450 degrees for 20 minutes.
  • Enjoy!
