  • Cut your baguette into circles. Place onto cookie sheet and bake at 350 degrees for 10 minutes to warm. Set aside.
  • In a skillet over medium heat, warm the Mediterranean quinoa until it is warm to your touch. Add in the artichoke, olives and capers. Stir and warm.
  • Remove from heat and stir in the basil.
  • Divide mixture onto each baguette slice, drizzle with balsamic vinegar and serve. ENJOY!


Recipe is best enjoyed when it is prepared. If you have left overs, store mixture in a container in the fridge.  Use new baguettes each time you prepare.
