Cauliflower Tabbouleh

One taste of this cauliflower tabbouleh and you will not even realize it was made with cauliflower rice. This cauliflower tabouli is raw and full of flavor! It makes a beautiful and delicious dish.

  • 2 c cauliflower riced
  • 1/4 c green onions diced
  • 1/2 c kalamata olives halved
  • 1 c tomatoes diced
  • 1 c cucumber diced
  • 1 c parsley diced
  • 1/3 c mint diced
  • 1 T lemon zest
  • 1/4 c fresh lemon juice
  • 2 T olive oil or avocado oil


  • Mix together all ingredients except the lemon zest, juice and oil.
  • In a small bowl, whisk together the lemon zest, juice and oil. Then drizzle over top of your cauliflower tabbouleh mixture.
  • ENJOY!
