Herbed Lemon Pasta
Herbed Lemon Pasta is a delicious vegetarian meal that you can have on the table in 15 minutes or less. This lemon spaghetti recipe is light but packs a punch of protein with edamame pasta.

- 8 oz Edamame Spaghetti from Explore Cuisine
- 1 t lemon zest
- 1/2 c lemon juice
- 1 c fresh basil diced
- 1 t rosemary diced
- 1 t oregano diced
- 1/2 c parmesan shreds dairy free or dairy
Fill a large pot with larger to boil your 8 oz of edamame pasta. Be sure to salt the water. Boil the noodles for about 8 minutes or until the noodles are tender but still firm. When pasta is done, rinse under cool water.
While your pasta is boiling, zest one lemon until you get 1 teaspoon of zest. Juice both lemons, which should yield about ½ cups of fresh lemon juice.
In a large bowl, add the lemon zest, lemon juice, diced herbs and parmesan. Toss pasta with herbs, season with salt and pepper and ENJOY!
