This comforting and hearty 3 Ingredient Potato Soup is easy to make with just a few inexpensive ingredients. It's the perfect meal for busy weeknights, or when you're low on groceries!
Add a tablespoon of oil or butter to a large soup pot and fry the onion and potato on a medium setting for about 10 minutes until softened.
Add the vegetable stock, bring to a boil then leave to simmer for 15 minutes.
