Polenta Corn Casserole
Feed a large family with this filling and flavorful polenta corn casserole. It's gluten-free and dairy-free. Everyone will love how the polenta, mustard, and corn all mix together.
Preheat oven to 325 degrees.
Prepare an 8X8 pan, oil lightly.
Saute corn, pepper, onion over medium heat with 1 T of oil.
In a medium bowl, crumble polenta.
In a new bowl combine the eggs, mustard, salt and pepper. Stir in sauted veggies and polenta. Stir well.
Transfer to baking dish.
Bake about 45 minutes or until golden brown and cooked through.
