Polenta Corn Casserole

  • Preheat oven to 325 degrees.
  • Prepare an 8X8 pan, oil lightly.
  • Saute corn, pepper, onion over medium heat with 1 T of oil.
  • In a medium bowl, crumble polenta.
  • In a new bowl combine the eggs, mustard, salt and pepper. Stir in sauted veggies and polenta. Stir well.
  • Transfer to baking dish.
  • Bake about 45 minutes or until golden brown and cooked through.
