In a large mixing bowl, mix oil and eggs together. Then fold in the sugar. Stir gently until mixed and let stand for 5 minutes for the sugar to dissolve.
Mix in the flour, baking soda, salt and cinnamon.
Once the mixture is blended well, add in your sliced apples and optional butterscotch baking chips.
Pour the batter into a lightly oiled bundt pan and bake for 20 minutes in an oven heated to 370°F/190°C.
After 20 minutes has passed, turn oven down to 350° F/175°C and bake for 40 more minutes, or until done.
Cool on a wire rack, carefully remove the cake from the bundt pan, and serve.
Notes
Choose fresh apples that are flavorful. Dry, boring apples will make for a less than tasty apple cake!
I usually don't peel the apples when making cake. It's easier that way and we enjoy the texture. You can peel them if you wish to though.
Oil the pan. There's nothing worse than a bundt cake sticking to the pan, so be sure to fully but lightly coat the inside of the pan with oil before adding the cake batter.
Use your favorite gluten-free baking blend flour. We almost always use Bob's Red Mill 1:1 Gluten Free Baking Flour.
Note that this cake bakes at two different oven temperatures. We've made this recipe many times, and found that this method results in the best texture!
You can check to be sure the cake is fully cooked by inserting a toothpick or wooden skewer into the center. If it comes out mostly clean, it's ready!
If you don't have a bundt pan, this gluten-free apple cake recipe can be baked in a tube pan, a 9x13-inch cake pan, or two 9-inch round pans. Just be sure to leave space at the top of the pan to allow for rising.
Make this cake extra delicious by drizzling it with caramel sauce, or spreading it with vegan cream cheese frosting!
Keep leftover apple cake in an airtight container for up to 3 days. It stores best in the refrigerator.
