This vegan banana pudding layers sweet from scratch pudding, freshly sliced bananas, crumbled vanilla cookies and vegan whipped cream. Minimal ingredients come together quickly to create a comforting vegan dessert.
Combine the sugar and cornstarch into a saucepan. Whisk the dry ingredients together.
Slowly pour in the dairy-free milk(s). Whisk consistently, until thickened. This is where you want to add in the turmeric if you want your pudding to be a yellow color.
Crumble up your vegan cookies (of your choice) and place them into an 8×8 baking dish.
Get out a cutting board and use a knife to slice your fresh bananas into ⅓-1/2 slices and place into the 8×8 baking dish on top of the cookies.
Gently pour the pudding over top of the mixture in the 8×8 baking dish to create another layer.
Top the mixture in the 8×8 baking dish with whipped cream. Optionally, you can add some crumbled cookies to the top for garnish.
