Dice day-old vegan bread into cubes and put in a large mixing bowl.
Add oil to the bowl and stir well until all cubes are coated with oil.
Add salt, garlic powder, and Italian seasoning and stir.
Pour vegan bread cubes onto a lipped baking sheet with parchment paper and bake at 350 degrees F for 10 to 15 minutes until golden brown and crunchy. The vegan croutons will crisp up more as they cool.
