I didn’t really know until recently that zucchini parmesan was a thing. Believe me, I love eggplant parmesan and we even have an air fryer eggplant parmesan recipe too.
When I happened upon a huge haul of fresh garden zucchini from a friend, I started to generate ideas of what I could make. I knew we loved eggplant parm and though, why not make a zucchini parm! The rest is history!

All about Zucchini
Today we are using zucchini in our air fryer to make air fryer zucchini coins! Who doesn’t love a good fried zucchini recipe? YUM!
Zucchini’s are part of the squash family. Squash is separated into two categories: winter squash and summer squash. Zucchini falls into the summer squash category.
Typically, summer squashes have a higher water content than winter squash and their skin is thin and edible.
Zucchini plants are pretty popular for home gardeners. There is a running joke that you can’t look away from a zucchini plant because zucchini grows so fast.
It almost seems like they can double in size overnight. While that isn’t quite accurate, they can grow fast during the summer!
HOW EASY IS IT TO USE THE AIR FRYER?
Still not convinced about an airfryer? When I say it’s super simple, it’s simple. You literally set the temp, figure out the time, and wait for that food to be done.
Is there any other appliance out there that is as simple as that? And clean-up? A total breeze. After you are finished making your air fryer zucchini coins, simply take out the inner air fryer basket, dump it and wash. Then repeat with the outer basket.
AIR FRYER SUCCESS EACH AND EVERY TIME
I’ve owned my air fryer now for a while, and I have to be honest…I’ve yet to find a recipe that I don’t love. And did I mention how simple it is?
To say I’m a creature of habit is an understatement. I love being able to cook a meal and know with confidence that it’s going to taste amazing each and every time.
Path Of Life Quinoa
A few years back, I was introduced to the brand Path of Life while attending Expo East! I LOVE all the tasty products that Path of Life has to offer. These products from Path of Life have really helped my busy family!
Having Path of Life products in my freezers ensures that I can easily whip up some tasty recipes! You might remember the soul warming Quinoa Kale Soup that we posted a few months back? Or maybe you remember the Kale Quinoa Salad!
So for this recipe, we used the Tuscan Quinoa Blend. This steamable bag is a combination of a Grain and Bean Blend, Organic Kale, Mushrooms, Garlic, Salt and Pepper. Path of Life describes their products as “simple, wholesome, natural” and I couldn’t agree more.
You might notice that the packaging looks a bit different. It sure does! Path of Life recently redid their packages and I LOVE the new look! It is bright, simple and attractive. The products still are amazing and they even have a few new ones too!

Zucchini Parmesan Tips:
- Meat eater? You can add pepperoni to the zucchini parm. You can also use a meat based marinara sauce as well.
- Vegan or Dairy Free? You can sub out the egg wash for maple syrup and use dairy-free cheese for your zucchini parmesan.
- Anti-zucchini? You can sub out the zucchini and add in eggplant.
- Not gluten-free? You can use wheat panko crumbs!
- Salt-free? If you are trying to avoid added salt, you can skip the step of salting the zucchini. This might make the zucchini a little mushier, but I think you can handle it!
Zucchini Parmesan Questions:
- Does Zucchini Parmesan freeze well? I have not tried to freeze it, but I would venture to guess that it does not free well. My thoughts are the zucchini might get mushy.
- What if I don’t have panko crumbs for the zucchini parmesan recipe? That’s no problem, you can crush up crackers to make a crumble that works just the same as pankos!
- What do I serve the zucchini parm over? You can eat it as is, serve it over pasta or serve it over a quinoa blend like I did.
- How long will this last in the fridge? This is not a meal prep type of recipe. The zucchini parmesan recipe tastes best the day of and for leftovers the next day. Beyond the second day, it starts to loose the appropriate texture.

Step by Step Instructions for Zucchini Parmesan:

Slice your medium zucchini into 1/4 inch pieces. Salt the zucchini and let it sit for 15 minutes. (this helps to remove moisture)

In a small bowl beat eggs, set aside.

In a small bowl mix panko, Italian Seasoning and parmesan.

Dip each zucchini piece into the egg mixture, followed by the panko mixture to coat. Make sure you do both sides.

Cook the zucchini in the air fryer at 400 degrees F for 4 minutes. Then you are going to flip over each zucchini piece and cook for an additional 4 minutes.

Gently spoon sauce onto each individual piece of zucchini.

Place cheese on zucchini pieces. Cook in your air fryer at 380 degrees F for 2 minutes or until cheese is melted.

Prepare quinoa blend per the directions on the bag, Divide among four plates

Place 4-5 zucchini pieces on each plate on top of quinoa.

Garnish with basil and cilantro.

Ingredients

- 1/3 c parmesan cheese optional

- fresh basil and cilantro
- salt
