A four-ingredient Potato Soup Recipe that's ready in about 40 minutes! This simple soup recipe will warm your belly with comforting flavors and textures, and it's so easy to make.
Add oil or butter to a large soup pot and fry the onion and potato on a medium setting for about 10 minutes until softened.
Add the vegetable stock, bring to a boil then leave to simmer for 15 minutes.
Stir in the milk and add salt and pepper to taste.
Transfer the soup to a large jug blender and blitz until smooth. Work in batches if needed.
Serve with a little fresh chopped parsley and extra black pepper on top (optional).

Use homemade vegetable stock for this soup recipe, or buy it at the store! Packaged broths can contain a lot of sodium, so you may want to opt for a low-sodium option.
To give potato soup a creamy comforting texture, we're using a standard blender. A stick blender can also be used.
If you'd rather not blend the soup, it's delicious left chunky as well.
For a richer, creamier soup, use half and half or heavy cream in place of the milk in this recipe.
Other seasonings can be added to your potato soup. Try a bit of cajun seasoning or a dash of hot sauce to give it a kick.
A handful of parmesan or grated cheddar cheese will also be so good here, if you feel like adding another ingredient to this basic potato soup recipe.
