Use a sharp knife to carefully shave off the roasted corn kernels.
Finely dice the tomatoes, red onion, cilantro and jalapeno (removing the seeds).
Add everything to a large mixing bowl along with the garlic, lime juice and salt. Mix well to combine. Taste and add additional salt or lime juice if needed.

For the best flavor, roast or grill fresh corn on the cob for this recipe. You can also air fry corn on the cob to roast it! It only takes 8 minutes to cook corn this way.
