Ingredients
4potatoeslarge, white baking potatoes
⅔cupalmond milk
¼cupvegan butter
salt and pepperto taste
fresh parsleyoptional garnish
Instructions
Peel and roughly chop the potatoes.
Add the potatoes to a large pan of boiling water and simmer for 20-25 minutes or until fork tender, then drain.
Return the potatoes to the pan and mash roughly.
Add the vegan butter, almond milk and some seasoning to taste. Stir to combine then mash until completely smooth.
Transfer to your serving dish of choice and garnish with some fresh chopped parsley and extra vegan butter (optional).

Not an almond milk fan? That is okay, you can substitute your favorite non-dairy milk in its place.
